Cooking Sichuan Food

My name is Dan, I and my wife taren are both from Australia. We loved sichuan peppery food, the dishes we would love to learn are "Gongbao Jiding", "Shuizhu Yu", "Mapo tofu". Traffic Inn has sichuan food cooking classes upon request, eddie and samuel will do the translation. Take notes during the class, we would have forgotten lots of details and ingridients otherwise.
Holidays & Festivals

Mid-autumn festival in the traffic inn was a lot of fun, the staff throw out a competition to encourage everyone to eat as much moon cakes. My friend Howard finish with swallowing 5 fist-sized cakes in 5 mins. Later the same evening we all gather up and followed with Nina (the school volunteer) to learn making lotus candle boat. The kind of colored boat glowing with candle inside that you put it in river and consequently make a wish for your friends or your family, it's a chinese tradition.




Halloween make-up started at 8:00pm, the lights in the hostel restaurant are all turned off, from the reception to the garden you see spider web made of white string and spooks of all sizes and looks hung all over the place. It was good fun to see people digging their head in the water for apples. My face make up resembles a zombie that just got shot with red water color dipping down from the mouth.



Dumpling Night is the best opportunity to meet other travelers. We all gather up laughing and doing the best we could churning out nice looking dumplings. Emory who teaches us is very skillful and speak good English to be able to explain enough. You first take a piece of dough, rounded it up on a stick, paste up fillings (spring onions, minced meat mixture), seal the edge. In the next 10 minutes dumplings will be ready when you see it afloats boiling water. Dipping sauce is not that much spicy as we originally thought. It tastes okay and it's definitely satisfying so you don't plan on eat any more for supper. Eat as much as you could.

Once in every two weeks we are happy to stage "Chinese cultural programs", most noticeable of all are "Mahjong class", "Survival chinese", "Make dumplings", "Chinese caligraphy", "Taichi class", ect., We welcome your participation through which to experience some aspects of traditional Chinese lifestyle that's becoming less and less observed elsewhere. At any time you want to do any of these programs, please let us know.
This is a costume show carried out in our restaurant featuring man and woman's dress in ancient times. The way they walk, talk, give and receive things are pretty much like it. Down a gown, take a bow to greet an associate you would randomly meet on the street. Act and look like an ancient poet in a fancy makeup.
Our hostel's main feature is sports, here youc an play badminton, climb a wall, enjoy bar games, join for chess competition and so on.
Merry Christmas everyone! Though we can't be at home spending the night with the family, relatives and friends, we still can sing a christmas carol together, share the moment of happiness, longing for home we all do, come make a free international phone call to tell our parents that we love them and is coming home soon. 1,2,3 "You better watch out, you better not cry, better not pout, I'm telling you why Santa Claus is coming to town".
